Here we don’t mess around with the land, the vines or the environment, the estate has been organic since 1988 and biodynamic since 1997. A trendsetter, the Drouhins have the tools in hand to stay on top! The harvest is done manually throughout the Côte d’Or. “Tailor-made” is also essential for aging and ageing. Thus, the new barrel releases a lot of tannins and aromas, the wine must be able to withstand this contribution. For the same cuvée, Joseph Drouhin uses barrels of different ages, the oldest being five years old. The proportion of new barrels can vary between 20 and 50% depending on the appellation, the year, the foreseeable evolution of the wine… The Grands Crus of Chablis are not aged in new barrels because their fairly marked minerality would risk be masked by the tannins of the wood. Moreover, for all his cuvées, Joseph Drouhin indicates the appellation and the vintage on each cork, which is quite unique in Burgundy. The House was one of the first to do so, more than 40 years ago.
