At the foot of the Montagne Noire, between woods and garrigue, Jean-Michel Cazes (owner of Château Lynch Bages, Grand Cru Classé Pauillac) has selected a qualitative plot to create a great AOC Minervois wine. The altitude, the Atlantic mildness and the Mediterranean sun allow a slow and balanced maturation of the grapes. This parcel reveals the potential of the local grape varieties (Syrah, Carignan, Mourvèdre), their great typicity and their aromatic complexity. With a deep red color with garnet reflections, this wine presents aromas of red fruits and garrigue finely sublimated by a light woody taste. These aromas are found very early in the mouth, mixed with an elegant structure, marked by silky tannins, remarkably melted. The whole is long, balanced and of great finesse. To be drunk with red meat and game, lamb, goat, pork, all prepared in a southern style.
