Harvested exclusively by hand, the grapes are picked according to the degree of phenolic ripeness of each previously identified grape variety. The harvest is sorted in the vineyard. It is carried out with great meticulousness. All the malolactic fermentation is carried out in new barrels, which give the wine more body and roundness. The wine is aged separately in barrels for almost twenty months before being blended.
At the beginning of 1998, the Jean de CONINCK family, descended from a line of winegrowers listed in the Libourne producers’ directory since 1739, acquired Château Clos de Salles. As soon as they took possession of the property, the new owners were keen to put the estate on a broader footing. The estate was equipped with new vats and the barrel cellar was renovated.
