Fruit selection is the first important step in the process of making a quality brandy. The Metté distillery has been renewing its loyalty to the same suppliers for several years in order to ensure the excellent quality of the fruit. The fruits are delivered in small quantities so as not to damage them, then they are sorted and placed in fermentation vats or macerated by hand to avoid the use of the pump which would rush the fruit. After maceration, a single distillation will be carried out, following which the head* and tail* are eliminated to keep only the heating heart (70°) which will be reduced to 45° with water. After distillation, the eaux-de-vie are placed in stainless steel vats. They age there between 6 and 8 years before marketing. As for aged eaux-de-vie, they are stored in carboys placed in the attic. * head: very strong and ethereal alcohol * tail: very weak and fatty alcohol.
