The grapes come exclusively from the southern slopes of the “La Rivière” vineyard, cultivated according to biodynamic principles. A small proportion of the estate’s Pinot Noir grapes are harvested separately and “infused” for a few days, cold and without alcoholic fermentation, before being poured into the Brut Nature Blanc juices, to forge this totally pioneering champagne with a new spirit.
