Joseph Drouhin Chablis Premier Cru “Mont de Milieu” 2022

A nervous and dry wine, typical of Chablis. Lots of purity and a very pleasant floral style. Chablis shows a very mineral, almost iodized character. The harvest is manual, the pressing is slow to respect the fruit. The “Kimmeridgian” calcareous soil containing billions of small marine fossils in a whitish cement that must have been the bottom of the ocean… 130 million years ago. This marine origin gives a unique flavor to the wines of Chablis.
